In Thailand, one of the breakfast choices I enjoy the most is a delightful trio consisting of a club sandwich, a refreshing iced coffee, and a succulent watermelon shake. This combination pleases my taste buds with its simplicity, delicious flavours, and lightness. Amid the tropical climate, this breakfast ensemble is a delightful indulgence that energises me until lunchtime. This breakfast set is affordable and typically costs around A$10 at a decent restaurant in a tourist area.

Thai Club Sandwich Recipe

Ingredients:

  • 6 slices of white or whole wheat bread, toasted
  • 200g cooked chicken breast, thinly sliced
  • 4 slices of cooked bacon
  • 2 large eggs, fried or boiled
  • 1 small cucumber, thinly sliced
  • 1 tomato, thinly sliced
  • 1 small red onion, thinly sliced
  • 2-3 lettuce leaves
  • 4-6 tbsp Thai mayonnaise (or regular mayonnaise mixed with a bit of Sriracha sauce for a Thai twist)
  • 1-2 tbsp Thai sweet chilli sauce
  • 1-2 tbsp butter, softened
  • Salt and pepper to taste
  • Toothpicks or sandwich picks

Instructions:

  1. Prepare the bread: Lightly butter one side of each slice of toasted bread.
  2. Assemble the first layer: Spread a thin layer of Thai mayonnaise on the first slice of buttered toast. Place a few slices of chicken breast on top, followed by a couple of cucumber slices and a piece of lettuce. Drizzle a small amount of Thai sweet chilli sauce over the chicken.
  3. Add the second layer: Place another slice of buttered toast on top of the first. Spread another layer of Thai mayonnaise, then add the cooked bacon, sliced tomato, and fried or boiled egg. Sprinkle with salt and pepper to taste.
  4. Top it off: Place the final slice of toast on top. Press down gently to compact the sandwich.
  5. Cut and serve: Carefully cut the sandwich diagonally into quarters using a sharp knife. Secure each quarter with a toothpick or sandwich pick to keep the layers intact.
  6. Serve: Arrange the sandwich quarters on a plate and serve with extra Thai sweet chilli sauce on the side for dipping and a few potato chips or fries for a complete meal.
